Rice kheer (payasam)

Rice Payasam

ingredients needed

1) Rice -   1/4 cup
2) Milk - 2 litre
3) Sugar - 400gms- 600gms / as per requirement
4) Broken cashew nuts/almonds - 1 handful
5) Ghee - 3 table spoon
6) Saffron - 1 pinch (not mandatory)

method of preparation



  •   Boil the milk in a cooker.
  • after washing put rice into the boiled milk
  • wait 2 minutes & add half of the sugar while stirring slowly
  • put the flame into dim ( very low) & close the cooker
  • put off the flame before steam arise when it reaches the peak. 
  • after 2 minutes again put on the stove and cook in dim flame
  • repeat the process for 3 hours without allowing cooker make the steam( otherwise milk may overflow)
  • open and add remaining sugar, fry till light brown and add to kheer. add a pinch of salt for better taste
mouthwatering Kheer ready! enjoy
